Pumpkin soup with black garlic

  • 1 pumpkin, approx. 1 kg
  • 5 black garlic cloves
  • 4 shallots
  • Salt, pepper, olive oil

Roasted pumpkin seeds with black garlic:

  • Pumpkin seeds
  • 3 tbsp. olive oil
  • 1 tbsp. black garlic paste
  • Salt
  • 1 tsp. sweet paprika

Preparation of the pumpkin velouté:

  1. Start by washing and halving the pumpkin.
  2. Remove the seeds and rinse them in a colander to remove all the flesh. After the first rinse, if any flesh remains, you can put them in a bowl with water to finish rinsing. Spread the seeds out on a clean cloth and dry well.
  3. Preheat oven to 180 degrees. In a small bowl, combine the olive oil, black garlic paste, salt and paprika. Add the seeds and mix well so that all the seeds are coated.
  4. Spread the seeds on a parchment-lined baking sheet and bake for 20 minutes. Halfway through baking, remove the tray and stir the seeds.
  5. Cut the pumpkin into cubes and the shallots coarsely. Fry the shallots in a pan with a drizzle of olive oil. When golden, add the pumpkin and sauté for 3-4 minutes. Cover with just enough water and season with salt. Leave to cook for around twenty minutes.
  6. When the pumpkin has melted, blend in the 5 cloves of black garlic. Season with salt and pepper. Serve with a drizzle of olive oil or cream, and add the toasted pumpkin seeds on top.
